1415716_10151978788778324_1576252841_nI have been experimenting with trying to make tasty treats that both my children will eat that have some good quality healthy food in them.  I experimented with this homemade LCM recipe and it was a hit with the kids and both me and hubby!!

The other thing that I totally LOVED about this recipe is that you don’t have to bake anything as it is all raw food cooking!!  Absolutely delicious!!

Ingredients:

2 Cups of Rice Bubbles

1 Cup of Desiccated Coconut

1/8 Cup of Cocao Powder (you can use cocoa instead if you like)

1/8 Cup of Chia Seeds (could replace with any seeds you like)

1/4 Cup of Coconut Oil

1/3 Cup of Honey or Rice Malt Syrup

Instructions:

Mix all of the dry ingredients together in a bowl.  Mix honey and coconut oil together in a seperate bowl.  If coconut oil is hard you can mix over very mild heat to liquefy but make sure you don’t heat up the honey and coconut oil too much.   Mix dry ingredients with wet ingredients.  Pour ingredients into a brownie tray lined with baking paper. Compact it down evenly in the tray and pop it in the fridge.  Once it has gone hard it is ready to eat!!

Eat and ENJOY!!

Being a mum to 3 kids (one of them full time at home with me) and trying to juggle everything became pretty crazy.
