Cinnamon Tea Cake

Looking to make a simple cake for afternoon tea for the kids? This is a winner.

Ingredients

  • 2 tbsp butter, softened
  • ½ cup caster sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • ½ cup milk
  • 1 cup self raising flour
  • 3 tbsp caster sugar mixed with 1 tsp cinnamon for sprinkling
  • butter for spreading

Method

  1. Pre-heat the oven to 175C fan-forced and grease and line a loaf tin so that the paper extends over the sides.
  2. In the bowl, beat the butter and sugar until soft and creamy.
  3. Add the egg and vanilla and beat until mixed through.
  4. Add 1/2 of the flour then 1/2 of the milk and continue adding and mixing like this until the batter is smooth.
  5. Spread the batter into the tin and bake for 30 minutes or until a cake tester comes out clean.
  6. Quickly turn the cake onto a wire rack right-side-up and spread it with butter. (The heat of the cake will melt the butter).
  7. Sprinkle the cinnamon sugar mixture over the top.
  8. Eat while still warm.
