Mmmm Muesli Cookies

We have been looking for a good muesli cookie recipe for a while and we’ve hit the jackpot. These are moist, healthy and best of all delicious!! I’m sure they would be a welcome addition to your kiddo’s lunchbox…

You will need:
3 cups of toasted muesli
½ cup of plain flour
100g of butter, melted & cooled
1 egg lightly beaten
1/3 of a cup of honey
¼ cup of chopped dried apricots
¼ cup of sultanas

Step 1
Preheat oven to 170ºC and line a large baking tray with baking paper.

Step 2
Combine muesli and flour in a bowl.

Step 3
In a separate bowl, whisk butter, honey & egg together.

Step 4
Add butter mixture to oats and mix well.  Fold through the apricots & sultanas.
Set to one side for 15 minutes.

Step 5
Roll spoonfuls of mixture into balls and place on baking trays.  Flatten each ball slightly with the back of a fork.

Step 6
Bake for 15 minutes.  Once cooked, cool on the tray for 10 minutes before transferring them to a wire rack.
Makes 20.
