One-Bowl Apple Cake

A quick and easy cake to whip up for afternoon tea.  Better still get the kids involved and make it a fun school holiday activity.

Ingredients
2 eggs
1 3/4 cups of sugar
1/2 cup of oil
2 heaped teaspoons of cinnamon
2 cups of plain flour
2 teaspoons of baking soda
1 tin of pie apples (or 6 fresh apples peeled & thinly sliced)

Method

Step One
Preheat the oven to 180 degrees C.  It is also a good idea to grease your cake tin at this point as well.

Step Two
In a large mixing bowl, mix the eggs, sugar, cinnamon and oil.

Step Three
Then add in the apples to the mixing bowl.

Step Four
Mix together the baking soda and flour and add to the ingredients. Mix well until all of the flour is absorbed by the wet ingredients (a fork works best for this).

Step Five
Pour the mixture into your greased tin and bake for approximately 55 minutes or until a skewer inserted in the centre comes out clean.

Voila! Afternoon Tea is served.
