Slowly slowly I am attempting some more radical recipes for sweets to see if they do actually taste any good and whether my kids will like them. I did personally find it hard to get my head around the idea that a chocolate dessert would taste good for a child when it was full of vegies.
So instead of having an opinion without experience me and Miss 7 decided to get our cooking on and attempt a sweets recipe full of veggies.
ps. just want to say right at the start that my kids were a big fan of this and kept coming back for more.
Ingredients:
1 Tablespoon of Margarine
1/4 Cup of Pureed Carrots (1-2 Medium Sized)
1/2 Cup Pureed Advocado (1 Medium Sized)
1/3 Cup of Cocoa or Cocao Powder
3/4 Cup of Rice Malt Syrup or Agave Syrup Or Honey Or Caster Sugar
Vanilla Essence
Dipping Fruits (we used strawberries)
Instructions:
Step 1: Cut Carrots up and boil in saucepan till soft
Step 2: Once carrots are soft take them out and puree them with whatever you have available. eg: magic buttet / nutribullet / stick blender / food processor
Step 3: Puree advocado. We just ran it through the magic bullet after the carrot to make sure it was completely smooth.
Step 4: Melt 1 tablespoon of margarine on the stove over low heat. Once melted add the advocado, carrot, rice malt syrup, cacao powder and vanilla essence.
Step 5: Whisk together by hand until it is a reasonably smooth consistency.
Step 6: Take off the heat and place desired amount into a serving bowl.
Step 7: Cut up dipping fruit (we used strawberries and it was delish with them)
Step 8: Get it into your belly!!
Step 9: Do a little happy dance that your kids just had treats that were full of vegies.
Just to note: This recipe creates quite a bit of dipping sauce for more than one family serving. You could choose to halve it when trying it out for the first time if you are not sure how it will go. I like that there was left overs as I can pop in the fridge for the next night and use different fruits to dip e.g. kiwi fruit yummo
