Rainbow Tower Cake
We’re not going to lie…this is a lot of food colouring. But when you’re already in for all that sugar, it’s a bit late to start worrying about it, right? Anyway, it’s a special occasion and this is it; the classic Rainbow Layer Cake.
Ingredients
- 1 x Vanilla Butter cake (batter only – don’t bake it)
- 1 x Classic Vanilla Frosting
- Gel food colouring in red, yellow, blue, green
Method
- Grease and line as many 18cm tins as you have with baking paper (don’t worry if you don’t have enough, just re-use them). Preheat the oven to 180C (160C Fan-forced).
- Divide the cake batter between five small bowls. Tint the bowls each a different colour – one red, one orange (use a mixture of red and yellow colouring), one yellow, one green and one blue.
- To bake the cakes, take one colour of batter the batter and spread it evenly into one of the lined cake tins – it will be a thin layer, but make it as even as possible otherwise it will bake unevenly.
- Bake for 12-15 minutes, or until springing back when touched, and cooked through. Continue until all the layers are baked, washing the tins between uses.
- Place the cakes on a wire rack to cool completely. These cakes are quite thin and flat, so they don’t need to be trimmed.
- Place a dab of frosting on the cake stand or plate that you want to serve the cake on, and use it to anchor the blue layer to the plate.
- Top it with one-fifth of the frosting and spread in a messy layer just to the edge of the cake.
- Repeat with the remaining layers, in the order green, yellow, orange and finishing with red.
- Top with the last of the frosting in a swirled effect. Serves 10-16.
