Super Simple Savoury Muffin

I just made these 5 minutes ago from a recipe that I found at the 4 Ingredients for Kids website.  They are simple, delicious and I’m thinking there will be none left by this afternoon…

1 cup of cheddar cheese, grated (reserve 1/4 cup)
2 cups of self raising flour
400g can of creamed corn (reserve 1/4 cup)
1 cup of buttermilk

Method

  1. Preheat the oven to 180C/350F.
  2. Place flour in a large bowl and make a well. Add all the other ingredients, except reserved corn and cheese and season.
  3. Using a large metal spoon, fold until just combined (don’t over mix or the muffins will be tough).
  4. Spoon the mixture into the cups of a greased muffin tray. Evenly dollop and sprinkle with remaining creamed corn and cheese.
  5. Bake for 20mins or until the tops are golden and spring back lightly when touched.
